Ingredients:-
1 tsp. Coconut Oil
1 tbsp. Rice Grains
1 tbsp. Split Black Gram
¼ tsp. Fenugreek Seeds
10 dry Red Chillies
1 tbsp. Coriander Seeds
500 gms. Raw Mango, diced
½ cup Jaggery
½ tsp. Turmeric Powder
Salt, to taste
½ Coconut, grated

For Udeedmethi:-
4-5 tbsp. Coconut Oil
Asafoetida
Mustard Seeds

Method:-
1. Heat oil in a pan and roast rice, black gram and fenugreek seeds in it until the black gram turns golden in colour. Let it cool down to room temperature.
2. In another pan dry roast red chillies and coriander seeds until golden in colour. Let it cool down to room temperature.
3. In a bowl add raw mango, jaggery, turmeric powder, salt and let it marinate for 10 minutes.
4. In a mixer/grinder, grind all the roasted ingredients along with coconut and water to a smooth paste.
5. In a wok, heat oil and add asafoetida and mustard seeds. After the mustard seeds crackle, add the marinated raw mango and saute for 2 minutes.
6. Add the paste followed by some water and cook for 4-5 minutes covered with a lid.
